Day 29: pannekaken (Norwegian pancakes)
My grandmother and grandfather were from Norway and one of the things I have deeply implanted into my memory is a breakfast dish called lefsa. It’s made with gobs of potatoes (which by the way is another memory I have of my grandmother…that woman could peel some potatoes!) and a bit time consuming.
I saw this pin a while back and knew I needed to give it a try:
These are much, much simpler to make and honestly taste fairly similar. The first time I made these we did them with berries, syrup and powdered sugar. I made them again a few weeks ago and ate them the way you eat lefsa: brown sugar and butter.
