It’s been a while since I posted a recipe review. I’ve been baking a bunch, but not so much new. Just those things that are easy and I know work. This week I had very ripe bananas (again) and I couldn’t bring myself to make or eat another banana muffin. I found this recipe and they are divine!
I did alter the recipe a bit, due to a lack of flour suggested so here’s my version:
Banana Chocolate Chip Squares
adapted from King Arthur Flour Whole Grain Baking Book (page 344)
3/4 cup unsalted butter
1 1/4 cup brown sugar
2 very ripe bananas
1 T lemon juice
1 t vanilla extract
3/4 t baking powder
1/2 t salt
2 t cinnamon
1/4 t nutmeg
1 large egg
1 cup spelt flour
3/4 cup barley flour
1/2-3/4 cup mini chocolate chips
1 cup chopped walnuts
Preheat oven to 350*. Lightly grease a 9×13 pan.
Cream butter and sugar in a bowl till smooth. Add bananas, lemon juice, vanilla, baking powder, salt, spices. Scrape the bowl. Add the egg, beating until smooth and scraping the sides and bottom of the bowl again. Stir in the flour, mixing well. Spoon into prepared pan. Allow the batter to rest for 15 min. Sprinkle with chips and nuts.
Bake until the center is moist, but not liquid, 25-35 minutes. Remove from oven and let cool.
